Easy Slow Cooker Beef Stroganoff

Since Beef Stroganoff is one of my all time favourites, I thought I’d try an easy slow cooker beef stroganoff recipe I found the recipe from a site called Stay at Home Mum. The recipe looked super easy.

Easy Slow Cooker Beef Stroganoff

3/4 cup Flour
1/2 tsp Mustard Powder
2 Brown Onion thinly sliced
250 grams Mushrooms sliced
1.5 kg Steak round or gravy
500 ml Salt Reduced Beef Stock
300 grams Sour Cream
Pepper To Taste
1. Cut the beef into 2cm cubes
2. In a bowl mix together 1/2 cup of the flour, the mustard powder and pepper to taste.
3. Toss in the beef cubes and coat them evenly.
4. Place the coated cubes in the bottom of the slow cooker.
5. Cover the meat with the sliced onion and mushrooms and pour over the beef stock.
6. Cover and cook on low for 7 hours.
7. Just before serving, combine the remaining flour and sour cream and stir through the mixture – this will thicken and make the beef lovely and rich.

I made a couple of changes to the ingredients of the original Beef Stroganoff recipe. I didn’t use the White Wine, and compensated for it with an extra 200ml of Beef Stock. I also left out the Salt since I’m trying to follow a low sodium diet. Last but not least I used 1.5kg of diced beef instead of 1kg.

Step 3 of the recipe didn’t work quite the way I’d hoped. It said to coat the beef cubes in the flour mixture evenly. The flour just seemed to clump together on the meat and was gooey.

Step 5 of this recipe says to cover the meat with the sliced onion and mushrooms. Just a quick disclaimer about the onions. I’ve never mastered the technique of cutting vegetables so for this recipe, it’s a bit of a combination of sliced, and chopped. One day I’ll learn how to cut vegetables properly like a chef.

If I could have done anything better it would have been to coat the beef cubes better. I’ve since found a video on how to do it properly. I’ve added it to the page for future reference. I basically threw all the beef into the flour mixture in a bowl and just mixed it all together. In hindsight I should have taken my time and did one cube at a time. Fortunately I don’t think it’s altered the taste of the meal. The same goes with the onion. It was cut differently but will taste the same at the end. I thought I may have used a smidgeon too much beef stock when I compensated for the lack of white wine but the flour used to coat the beef did a great job in making the liquid into a thickened sauce so I think I got it right. Since I didn’t use a few ingredients, I can’t compare it to the original recipe but as it turns out, it tasted pretty damn good.
